A Crazy Healthy Protein Salad
Here’s the dilemma: You want a super-fast meal that tastes good, has tons of nutrients, and won’t send you into a midnight feeding frenzy.
Impossible? Enter The Sweet Beet’s Crazy Healthy Protein Salad!
Although we don’t usually think of salads as being a great source of protein, this one breaks all the rules. Each energizing, protein-packed bite is like nutritional boot camp for the body. Surprisingly, these tasty greens are also filled with calcium, antioxidants, iron, and fiber. Another notable fact: It’s 100% vegan!
Crazy Healthy Protein “Salad”
1/4 cup raw quinoa
5 torn kale leaves (Can sub spinach or other green)
2 tablespoons frozen shelled edamame
¼ cup cooked adzuki beans or lentils
¼ of an avocado cubed
1 tablespoons toasted pumpkin seeds
(Can sub sesame seeds or slivered almonds)
Cook the quinoa for approximately 30 minutes (2:1 quinoa to water–can be made ahead and stored in refrigerator). Lightly saute the kale with a touch of olive oil. Boil the frozen edamame just until thawed. Toast the seeds in a toaster oven or on the stove top. Mix it all together, and add a drizzle of Balsamic dressing.
Balsamic and Mustard Dressing
1/4 cup balsamic vinegar
1/2 cup olive oil
1 teaspoon Dijon mustard
a pinch of honey or agave
salt & pepper
Mix all ingredients together in a jar. Cover and shake well. (Leftover dressing is fine in the fridge.)
